Easy Slow Roasted Tomato Hummus

Slow roasted tomatoes on top of a creamy smooth hummus need i say more? The most delicious way to eat up the season ending summer tomatoes. This recipe is so simple and the best part is you can easily buy hummus at the store to make this a semi-homemade dish.

Having these roasted tomatoes in the fridge is also a god send on busy days when you want delicious meals I highly recommend making a double batch.

For this recipe all you need is tomatoes, olive oil, garlic, lemon, salt and pepper. Your favorite vinegar and about 45 minutes in the oven. Baked in these dishes which help keep the flavors so delicious!

Description

Juicy slow roasted tomatoes served on top of creamy hummus the perfect dip for any celebration, snack and even a sauce of your favorite protein. 

Ingredients
  • 3 cup chopped tomatoes (mix of your favorites)
  • 5 cloves garlic (peeled and sliced)
  • 3/4 cup Olive oil
  • 1 tbsp whole peppercorns
  • 1 inch piece lemon peel
  • 1 tbsp kosher salt
  • 2 tbsp champagne vineger (your favorite kind)
  • 2 cups store bought or homemade hummus
  • 1 shallot, chopped
Instructions
  1. preheat the oven to 375'F. In an oven safe baking dish add in tomatoes, olive oil, garlic, shallot, lemon zest, pepper and salt. Mix and place in the oven. Roast for 40-45 minutes until the tomatoes are soft and jam like. Remove from the oven add vinegar and serve on top of hummus.
  2. Tomatoes separate from hummus will last 1 week in the fridge.
