Fig Balsamic Roasted Brussel Sprouts

Happy February Everyone! For me it feels like this is the new years. I live in LA and all I have to say is January has been a month that has felt like a year. To kick this month off I wanted to share a recipe my clients have been loving lately. So easy and delicious all you need is five ingredients and 25-30 minutes in the oven.

The key for the dish is high heat in the oven I love 425'f and using a fig jam that is just figs and a good quality balsamic vinegar

Brussel sprouts I find as a veggie that people either love or despise my dad grew up with canned and boiled and I cant imagine eating them like that. Needless to say this dish has been a hit for everyone the kids included.

All you need is :

  • fresh brussel sprouts - bottoms trimmed
  • grated garlic
  • olive oil
  • balsamic vinegar
  • salt and pepper

Description

Crispy umami bomb roasted brussel sprouts

Ingredients
  • 4 cups (2 bags) fresh brussel sprouts (bottoms trimmed)
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp fig jam
  • 2 cloves grated garlic
  • 1 tsp kosher salt
  • 1 tsp fresh cracked pepper
Instructions
  1. Preheat oven 425'f with the baking sheet inside. In  a bowl add trimmed brussel sprouts. In a measuring cup mix together oil, vinegar, garlic, jam and salt and pepper.

    Toss sauce with brussel sprouts. Remove baking sheet from the oven and spread brussel sprouts out so they aren't touching. 

    Roast for 15-25 minutes. Depends in the size of your sprouts check at the 15 minute mark toss and continue to cook until desired doneness. I love mine crispy with a little crunch.
