Effortless one pot meal for when you’re feeling Effortless one pot meal for when you’re feeling uninspired to cook 

Save this easy and so delicious instant pot red chili chicken! Perfect for when you’re short on time and just want a delicious meal!

All you need is : 

Olive oil @wearebrightland 
Boneless chicken thighs @pasturebird 
Kosher salt 
Chili powder 
Cumin powder 
Sliced red pepper and onions 
Few smashed garlic cloves 
14 ounces red enchilada sauce homemade or store bought 
Fresh cilantro, lime zest and juice for serving 

Heat instant pot on sauté mode. Add a swirl of olive oil and sauté peppers and onions for 3-4 minutes until they begin to soften. 
Season chicken with salt, chili powder and cumin. Remove pepper mix add more olive oil to pot and sear chicken on each side. Turn sauté mode off and pour in enchilada sauce and add garlic and onion mix back in. Stir well place lid on. Hit Manuel button time for 7 minutes with the seal closed. Once done release steam and shred. Add in fresh chopped cilantro, lime zest and juice!

My go to no cook appetizer for Thanksgiving so easy and delicious. It’s basically an antipasto salad in one bite.

All you need is 

One large jar of artichoke hearts in  water, drained 
One package of fresh balls of mozzarella 
One large container of cherry tomatoes 
One container of fresh basil 
One container of salami or your favorite antipasto meat 

Dressing 
1/2 cup  pizza oil @wearebrightland (Chefdanielle)
1 tablespoon of dried oregano, 
3 grated cloves of garlic
2 tablespoons of balsamic vinegar
1 tablespoon of red wine vinegar
salt, and pepper to taste 

Mix  all dressing ingredients together in a bowl and toss with artichoke hearts and mozzarella marinate in the fridge overnight. 

To serve- Skewer a tomato , artichoke heart, mozzarella and folded salami , piece for fresh basil. Drizzle with any remaining dressing and serve 

Can skewer a day ahead I just recommend not adding basil until serving and make extra dressing to drizzle on top!

These are so delicious no one would know they are made with avocado. All you need is a food processor or blender and the ingredients below and you have the best brownies you’ve ever had! Follow @chefdaniellechristy for all the recipes and cooking ❤️

#recipe 
1 ripe avocado
¼ cup creamy almond butter 
¼ cup maple syrup
2 eggs
1/2 cup coconut sugar
2 teaspoons vanilla extract
1 tsp espresso powder 
1/3 cup unsweetened cocoa powder or cacao powder
1/3 cup almond flour
1 scoop chocolate protein powder @equipfoods ( code Chefdanielle) 
1 teaspoon baking soda
¼ teaspoon kosher salt
½ cup chocolate chips 

Preheat the oven to 350°F and grease an 8-inch square cake pan with oil. 
In a high-speed blender or food processor, combine the avocado flesh with the almond butter, maple syrup, eggs, coconut sugar, and vanilla.
Blend until very smooth.
Now add the espresso, protein , cocoa powder, almond flour, baking soda, and salt. Blend until the mixture is fully incorporated and smooth. 
transfer the brownie batter to your prepared cake pan. Sprinkle the top with chocolate chips. 
Bake for 18-25minutes, until the edges are firm or the center is slightly giggly. Feel free to bake until a toothpick comes out clean I like mine on the gooey side . 
Let cool in the pan slice and enjoy!
