Simple Creamy Tomato Pea Orzo

All you need for this dish is

  • orzo
  • garlic and shallot
  • peas ( fresh or frozen)
  • canned tomatoes
  • heavy cream or coconut milk if dairy free
  • parmesan cheese
  • basil

This Creamy Tomato Orzo is a one-pot wonder that’s ready in 25 minutes flat! Serve it up as a saucy side dish to your favorite protein. 

Ingredients
  • 2 tbsp olive oil
  • 2 shallots (diced)
  • 3 clove garlic (minced)
  • 1 can organic diced tomatoes (drained of juice)
  • 1 cup peas (fresh or frozen dont need to defrost)
  • 1 cup orzo pasta
  • 1/2 cup parmesan cheese (fresh grated)
  • 1/2 cup heavy cream (coconut milk if dairy free)
  • 1/2 cup reserved pasta water
  • 1 tsp kosher salt (plus more for pasta water)
  • fresh basil (for serving)
  • 1 tsp balsamic vinegar
Instructions
  1. Bring a pot of water to a boil. Season with salt and add orzo cook for 5-7 minutes or until al dente and drain ( reserve 1 cup of pasta water) 

    In a medium skillet. Heat olive oil and add shallot and garlic season with salt and cook for 2-3 minutes until translucent. The add drained tomatoes and cook for 3-4 minutes. Stir in peas and pasta. Then add in cream, parmesan and 1/2 cup pasta water. Stir cooking until warmed through. Add more pasta water if needed. Stir in balsamic vinegar and Taste and add more salt if needed. Finish with basil and serve.
