This Creamy Tomato Orzo is a one-pot wonder that’s ready in 25 minutes flat! Serve it up as a saucy side dish to your favorite protein.
Bring a pot of water to a boil. Season with salt and add orzo cook for 5-7 minutes or until al dente and drain ( reserve 1 cup of pasta water)
In a medium skillet. Heat olive oil and add shallot and garlic season with salt and cook for 2-3 minutes until translucent. The add drained tomatoes and cook for 3-4 minutes. Stir in peas and pasta. Then add in cream, parmesan and 1/2 cup pasta water. Stir cooking until warmed through. Add more pasta water if needed. Stir in balsamic vinegar and Taste and add more salt if needed. Finish with basil and serve.
