Pesto is one of my favorite sauces to buy or make. It's that flavor bomb where you toss it with anything and makes delicious cooking so easy. I always make a big batch and then place servings into ice cube trays and freeze so I have it on hand whenever needed.

If you want to make a quick pesto all you need is 2 cups fresh basil, 1/2 cup grated parmesan,1/2 cup toasted pine nuts, 3/4 cup olive oil , 1 tsp salt, 2 garlic cloves. Place all in a blender and blend until smooth. Eat right away or store in the fridge for 3-5 days.
This is a great meal prep dish or perfect for a quick weeknight dinner. I love to serve this dish with roasted veggies, orzo or farro and a simple side salad. Heat oven to 400'f. Line a baking sheet with parchment. Place each piece of Salmon skin side down on baking sheet. Season each piece with salt then brush pesto on top. Bake 7-10 minutes or until fish is cooked to desired doneness. Remove from the oven and finish with lemon juice and pine nuts.
