Try my favorite Greek style turkey meatballs! So easy and delicious 😋 

Always make a double batch - freeze for the days when you don’t want to cook- your future self will thank you 

1 lb ground turkey 
1/4 cup sundried tomatoes in olive oil 
2 peeled garlic cloves 
1 tbsp dried oregano 
1 small shallot 
1/2 cup fresh basil and parsley 
Salt and pepper 
1/4 cup toasted panko 
1 egg 
1/2 cup crumbled feta cheese 
1-2 tbsp Olive oil 

Heat oven 400’f. 

In a food processor blend sundried tomatoes, garlic, oregano, shallot, basil and parsley until smooth ish. In a bowl add turkey salt, pepper, panko, egg and feta. Add tomato mixture and mix. ( wet your hands easier to mix) 
Heat skillet over medium heat and cook a bite sized portion of the mixture. Taste and adjust seasoning if needed. 
Roll into balls and place on a parchment lined baking sheet. 
Drizzle with olive oil and Bake  in a 400’f oven for 13-15 minutes depending on the size of balls! Or freeze and enjoy whenever you’re craving meatballs

I do truly believe that joy is the secret ingredient to all delicious food. I sometimes think if we’re not enjoying what we’re eating what’s the point. 

Food is way more than fuel,  It’s joy connection, gathering and community. It’s emotional support so many things that make us whole as a human. 

The more I’ve started bringing joy onto my plate. The better life has gotten, and I hope you feel the same . 

If your  meal prepping this week, just make sure if you only do one thing you bring JOY to everything you eat whether it be a juicy piece of summer watermelon or a warm cookie out of the oven no matter what it is and if you love it that’s all that matters.

These waffles are so easy to make and so delicious. Feel free to add your favorite spices or citrus zest to mix it up! What’s your favorite waffles topping? 

Protein - 25-30grams , fiber 10-12 grams 

2 cups oat flour @onedegreeorganics 
2 scoop vanilla protein powder @equipfoods ( code Chefdanielle) 
2 tbsp chia seed powder 
2 large eggs 
3/4 - 1 cup milk 
1/2 cup Greek yogurt 
3 tbsp maple syrup 
1 tsp vanilla extract 
2 tsp cinnamon or your favorite spices 
1/4 tsp almond extract 
1 tbsp baking powder
1/2 tsp salt

Preheat your waffle iron.
In a bowl, whisk together oat flour, protein powder, chia seeds, baking powder, salt, and spices.
In another bowl whisk eggs, vanilla, almond extract, milk, and yogurt. Mix until smooth. Add in dry ingredients and mix until smooth. 
Batter should be thick but pourable—add 1–2 tbsp milk if needed. let sit 5-10 minutes 
Lightly grease waffle iron if needed and cook according to manufacturer instructions until golden and crisp.
Serve immediately or let cool and store in the fridge for 5 days or freezer for 3 months.

If your like me and love carmelized onions but don’t love waiting for them to cook for 45-60 minutes this is my go to way! 

Literally put the onions in the slow cooker before bed and wake up to pure deliciousness. I also love to freeze in ice cube trays for meals later in the week/month

All you need is - I did a mix of onions but you can easily just use 1 type 

 6 large onions - peeled and thinly sliced ( red and sweet ) 
1 bay leaf 
1 tsp kosher salt 
3 tbsp olive oil @wearebrightland 

Place all ingredients in the slow cooker and toss. Cook on low for 12 hours. Use in your favorite dishes and enjoy!

One of my go to daily routines in cooking is using herb stems! 

Add in the stems of herbs - did you know the stems actually have more flavor/ nutrients than the leaves! 

I love to use cilantro when making Mexican, Thai , Asian dishes and parsley , roasemary, thyme when making Italian, American etc 

So easy and also great you don’t have to waste any part of the herb either!
