Ooey, gooey chocolate heaven. These brownies are so delicious not one person would guess that they are actually good for you. I have been making these for my clients each week and they are obsessed to say the least. These can be made in a blender or food processor, only one bowl need I say more. These brownies came together when I had whole bag of avocados left from team dinner I catered and I could not let them go to waste. Satisfy your brownie craving with these.

All you need is :

1 large ripe avocado – its okay if its brown

maple syrup

coconut sugar

almond flour

cacao powder

chocolate protein powder – can use more almond flour if you prefer no protein

vanilla, espresso powder

chocolate chips

These have healthy fats, no refined sugar, wholesome ingredients that make you feel good eating after. I am always a yes to dessert after dinner like is too short to not eat the treat. One note on baking time I love a soft gooey slightly undercooked brownie so if you prefer one that is cooked more adjust your baking time by adding a few minutes.

Instructions

  1. Preheat the oven to 350°F and grease an 8-inch square cake pan with oil.
  2. In a high-speed blender or food processor, combine the avocado flesh with the almond butter, maple syrup, eggs, coconut sugar, and vanilla.
  3. Blend until very smooth.
  4. Now add the espresso, protein , cocoa powder, almond flour, baking soda, and salt. Blend until the mixture is fully incorporated and smooth.
  5. transfer the brownie batter to your prepared cake pan. Sprinkle the top with chocolate chips.
  6. Bake for 18-25minutes, until the edges are firm or the center is slightly giggly. Feel free to bake until a toothpick comes out clean I like mine on the gooey side .
  7. Let cool in the pan slice and enjoy!
