Fast , fresh and so flavorful sundried tomato olive tapenade white fish! Dinner ready in less than 20 minutes. This dish tastes delicious and makes you feel good!

#recipe 

2 lbs cod or favorite white fish 
Kosher salt and pepper 
1 cup sundried tomatoes- olive oil packed 
1 cup Kalmata olives 
2 garlic cloves, grated 
1 cup fresh parsley 
2 tbsp capers 
1 tbsp lemon zest- save juice for serving 
1/4 cup olive oil @wearebrightland (chef Danielle) 
2 tbsp fresh chopped oregano - for serving 

Heat oven 400’f. Pat fish dry season with salt and pepper and place in a baking dish.

Add relish ingredients into a food processor and chop or chop by hand. Spoon mixture over fish and bake for 10-12 minutes or until cooked through. Finish with fresh oregano  and lemon juice.

Nothing better than a home cooked steak and this is such a simple way to ensure a delicious piece of meat every time! 

Here are A few key steps will ensure a delicious steak every time ! 

1. Lift out steak 30 minutes before cooking and Season steak liberally with kosher salt @redmondrealsalt 
2. Cook steak in a really hot cast iron skillet 
3. Pat steak dry before adding to pan 
4. Baste steak with butter, garlic and herbs - if you prefer 
5. Finish cooking steak  in the oven to desired doneness ( if steak is thick) 
6. Allow the steak to rest for 10 minutes after cooking that way all the juices stay in the meat

Save this for the next time you grill salmon! 

A brush of mayo on the fish gives it the fat it needs to keep it from sticking also the proteins and sugars enhance the browning process giving it a flavor packed crust! 

I simply season with salt and then after grilling toss it in my favorite lemon dressing. 

Dressing 
1/2 cup - 3/4 cup olive oil @wearebrightland
2 tbsp pepperchini brine 
1 tbsp Dijon mustard 
Pinch of red pepper flakes 
1  lemon zest and juice 
1/2 shallot minced 
Salt and pepper to taste 

Whisk all ingredients in a bowl and let sit for a few minutes. Taste and adjust seasoning if necessary
