It’s pepper season and on thing I love to do is freeze them and then grate the peppers on top of any dish! #recipe 

1 cup hummus
1/2 cup cabbage - finely chopped in food processor 
1 small tomato, diced
1/2 avocado, sliced or diced
1 medium carrot, finely chopped in food processor 
1/2 red bell pepper, finely chopped in food processor 
1 small cucumber - finely chopped in food processor 
1 cup arugula- finely chopped in food processor 
1/4 cup diced mozzarella cheese - 9 mini balls 
1 cup cooked, diced chicken 
2 tbsp olive oil
1 tbsp dried oregano @burlapandbarrel 
1 tbsp red wine vinegar
Salt and pepper, to taste
3-4 large cassava tortillas @eatcoyotas 

Instructions:
In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper. Set aside.
IN food processor finely chop veggies ( can do 1 by 1 or all at once) 
Add veggies and chicken, cheese in to bowl with the dressing and toss. 
Warm cassava tortillas and then spread the hummus on the bottom and then the chopped salad mix. Wrap up like a burrito and enjoy

All you need is a piece of foil! Simply crumble it up in a ball and scrub the hot  grill grates then get to cooking 😉

Don’t forget to clean the grates again after cooking!

I hate to tell you but making carmelized onions in the slow cooker actually works

If your like me and love carmelized onions but don’t love waiting for them to cook for 45-60 minutes this is my new go to way! 

Literally put the onions in the slow cooker before bed and wake up to pure deliciousness. I also love to freeze in ice cube trays for meals later in the week/month

All you need is - I did a mix of onions but you can easily just use 1 type 

 6 large onions - peeled and thinly sliced ( red and sweet ) 
1 bay leaf 
1 tsp kosher salt 
3 tbsp olive oil 

Place all ingredients in the slow cooker and toss. Cook on low for 12 hours. Use in your favorite dishes and enjoy!
