* Dry and 30 minutes- lift out your meat while you prep everything else I find 30 minutes is great and salt/dry well. 
* Better Sear: When meat is closer to room temp, it doesn’t cool down the pan as much, leading to a better crust.
* Tenderer Results: Even cooking helps maintain juiciness and tenderness throughout the cut.

Effortless one pot meal for when you’re feeling un Effortless one pot meal for when you’re feeling uninspired to cook 

Save this easy and so delicious instant pot red chili chicken! Perfect for when you’re short on time and just want a delicious meal!

All you need is : 

Olive oil @wearebrightland 
Boneless chicken thighs @pasturebird 
Kosher salt 
Chili powder 
Cumin powder 
Sliced red pepper and onions 
Few smashed garlic cloves 
14 ounces red enchilada sauce homemade or store bought 
Fresh cilantro, lime zest and juice for serving 

Heat instant pot on sauté mode. Add a swirl of olive oil and sauté peppers and onions for 3-4 minutes until they begin to soften. 
Season chicken with salt, chili powder and cumin. Remove pepper mix add more olive oil to pot and sear chicken on each side. Turn sauté mode off and pour in enchilada sauce and add garlic and onion mix back in. Stir well place lid on. Hit Manuel button time for 7 minutes with the seal closed. Once done release steam and shred. Add in fresh chopped cilantro, lime zest and juice!

I absolutely love frozen vegetables they are such I absolutely love frozen vegetables they are such a great thing to have on hand nutrient dense and also budget friendly. Another great tip is most of the time they are more nutrient dense since they are frozen right when they are picked! Easy way to reduce waste, prep time 

Let’s make frozen vegetables delicious 😋 save this for the next time you have frozen broccoli! 

To make this broccoli taste just like fresh here is what you need to do 

Heat oven to 400’f. Take your frozen broccoli and spread it out on your baking sheet. Roast for 15-20 minutes or until broccoli begins to brown. Then toss with olive oil I used @wearebrightland pizza oil and salt and roast for an additional 5-7 minutes! 

This works great with cauliflower, artichoke and squash! I haven’t tried any other yet!

10 minutes of cooking and you have a bowl of cozy! 10 minutes of cooking and you have a bowl of cozy! The best beef stew and best part made in the instant pot. I feel like this dish is so underrated. Budget friendly and flavor packed. All you need are some simple ingredients and you have yourself a nourishing delicious meal the whole family will love. 

Highly recommend making a double batch 😉
#recipe 

2 lbs beef stew meat
Salt and pepper 
1/2 cup GF flour 
2 tbsp olive oil 
1 cup chopped carrots and onions 
2 tbsp tomato paste 
Handful fresh herbs- rosemary, thyme , sage 
6 whole garlic cloves 
1 cup red wine 
1 Parmesan rind 
1 tsp fish sauce for finishing 

2 cups diced onions, potatoes and carrots , toss with 3 tbsp olive oil , 1 tbsp each thyme, salt and pepper - roast 425’f for 30-40 minutes 

Season beef with salt and pepper. Dredge in flour aand shake off excess. Sear in a skillet on all sides. Remove and place in instant pot. Add olive oil to pan and add carrots and onion cook for 2-3 minutes until they begin to soften . Add tomato paste and cook for 3-4 minutes until it becomes dark red, deglaze the pan with wine. Add in herbs and garlic cloves . Pour over meat. Seal instant pot and cook on manual for 50 minutes. Release steam, remove herb stems and rind. If you want to thicken sauce remove from the pan to a saucepan and cook over medium until reduced by 1/2 and finish with fish sauce! Add in roasted veggies and enjoy!
