Woke up this morning feeling all the feels. No mat Woke up this morning feeling all the feels. No matter what happens on Friday the work has been put in I have grown more in these last 6 months of training recovery wise I can’t even express the joy I have. 

I now nourish my body for performance and I have overcome every food I have ever feared since I was little 😭 

 I am so ready to show up and see what I am capable of. The athlete I thought I lost before my ED is still there and ready to have some fun! Cross the finish line with a smile and no matter my time the number does not define who I am. 

This is only my second Hyrox race I still have so much to learn but I trust my training and the process. All I can do is show up and GO. I’m excited to watch and cheer on all the other athletes as well. Beyond grateful for this opportunity and look forward whatever the outcome is. Thank you everyone for your support means so much ❤️ thank you @thehybridengine best coaches I could ask for

Best Rice Pilaf! Easy simple side dish for you favorite proteins ! A staple in my childhood and family favorite recipe! Swapped the box for this and never going back. 

I love making rice it so easy to add so much flavor from spices to broth! But I feel like the scene stealer is the Parmesan rind ! Happy cooking! 

Tag your rice loving friends! 

2 tbsp butter 
1/2 onion diced 
1/2 cup crushed cup spaghetti noodles 
1 cup Jasmine rice 
1 tsp salt 
1 tsp pepper
1 Parmesan rind chunk 
1 bay leaf 
2 cups bone broth 
Fresh herbs 
Lemon juice 

Melt butter in a saucepan and cook onion for 1 minute add rice and noodles and toast until butter is browned. Add broth and Parmesan rind and bring to a boil then reduce to a simmer place a lid on top and cook 15 minutes or until rice is tender and broth is absorbed . Add herbs and fluff with a fork!

Say hello to your new favorite Caesar salad! Grilling lettuce is a game changer! 

For this dish you can easily use store bought dressing and croutons or crispy chickpeas like I did! 

For the lettuce- preheat your bbq grill and brush lettuce with very light amount of olive oil and grill 2-3 minutes per side or until it begins to char. Remove from the grill and season with salt and pepper. 

Chicken - season with salt and pepper and grill until internal temp reaches 165’f. Toss with some dressing and place on top of grilled lettuce and top with croutons or crispy chickpeas. 

Dressing 

1 cup Greek yogurt or mayo 
1/2 cup Parmesan cheese grated 
1 large clove garlic grated 
1 tbsp lemon zest 
juice of lemon 
1 tsp worchestire sauce 
1 tsp fish sauce @redboatfishsauce 
1 tbsp DJION mustard 
Fresh cracked pepper 
Pinch of salt @redmondrealsalt 
Horseradish/ optional 

Place all ingredients in a bowl and mix until combined. Taste - Add additional salt and pepper if needed!
