This simple recipe is surprisingly delicious. Some taco seasoning and your favorite jar of salsa will give these chicken breasts tons of flavor. And cooking the breasts in the salsa keeps them super tender and juicy. Nothing worse than dry chicken.
It’s a recipe I reach for often as there’s always chicken in the freezer and salsa in the fridge. All the ingredients in this recipe are staples I keep in my pantry and fridge to keep healthy home cooked meals easy.
All you need for this recipe is:
- black beans
- fire roasted corn
- Jarred organic salsa or homemade
- fire roasted tomatoes -I love the ones with green chiles
- chicken – I love getting pasture raised
- Taco seasoning
- Cilantro and lime
- Avocado or guacamole is optional but so delicious on top
To make this meal you quickly sear the chicken a pan and then add into a baking dish, top with the remaining ingredients, bake and then serve! A true one pan meal the whole family will love.
Cooked chicken will keep well for 2-3 days in your fridge. Reheat it gently on the stove, adding a little splash of water to the pan if the salsa sauce gets too dry. Or you can use a microwave to reheat if you’re away from home. Happy cooking XOXO

Heat oven to 375’f. Season chicken with salt and taco seasoning. Heat a pan over high heat , add avocado oil and sear chicken on each side. In and oven safe baking dish mix corn, beans, tomatoes, lime zest and 1/2 cup salsa. Season with salt and place chicken on top. Cover and bake 20-30 minutes of until chicken is cooked through. Finish with lime juice and cilantro!
