This rich and buttery cast iron steak with a herb packed pistachio salsa is a steak lovers dream. Nothing beats a delicious juicy steak for dinner and I love this recipe because it is really simple but is full of flavor. A quick and easy meal you can serve for the family or dinner party.
This salsa is a twist on salsa verde. I love the crunch from the pistachios, acidity from the lime and herby goodness from the parsley. I highly recommend making a double batch it goes so well with any veggie and even morning eggs.
Have you ever used the finger test to check for Steak doneness? I know a meat thermometer is key to the internal temperature of meat but see below for a little tip if you happen to not have one!
Open the palm of your hand. Relax the hand. Take the index finger of your other hand and push on the fleshy area between the thumb and the base of the palm. Make sure your hand is relaxed. This is what raw meat feels like.
Now gently press the tip of your pinky and your thumb together. Again feel the fleshy area below the thumb. It should feel quite firm. This is what well done meat feels like when you press on it.
Press the tip of your ring finger and your thumb together. The flesh beneath the thumb should give a little more. This is what meat cooked to a medium doneness feels like.
Gently press the tip of your middle finger to the tip of your thumb. This is medium rare.
Press the tip of your index finger to the tip of your thumb. The fleshy area below the thumb should give quite a bit. This is what meat cooked to rare feels like.

Salsa
Place all ingredients in a bowl mix together and season with salt to taste. Allow to sit for 10 minutes and serve.

Bring steaks to room temperature. Heat a Cast-iron skillet over medium high heat. Add avocado oil or ghee. Pat Steak dry and season steaks liberally with salt and pepper. Place steak in pan and sear 2-3 minutes per side. Once a crust has formed turn every 30 seconds and baste with fat from steak. Once it reaches 120’f internal temperature remove from pan and allow to rest 10 minutes before cutting. Serve with salsa.
