If you’re looking for a good, filling snack to help during busy days, or anytime really, these Coconut Almond Energy Bites are just the trick. I’ve been making them for the past couple of months as a quick pick-me-up after my workouts, and my clients have been taking them to work to help ease the “hangry” afternoon times.

These come together in the food processor and taste so nutty, chocolatey and the perfect amount of sweetness.

Rich, nutty, chocolately, coconut filled these protein balls are so delicious and nutritious. 

Ingredients

Instructions

  1. Place dates in a bowl and pour hot water to cover the dates. Let sit 5 minutes.
  1. Place almonds in food processor and blend until finely chopped. Add dates and blend until chopped and add in coconut butter, protein, cordyceps and coconut then blend until paste forms. Roll into balls and roll into toasted coconut.
  1. Place in the fridge and once cold enjoy!
