I love cooking fish in the oven its a full proof way to easily cook fish. Halibut is one of my favorites because its really mild and will take on any flavors you love. When buying fish remember to ask the fish man at the store when it was delivered/defrosted. Make sure it does not smell fishy and looks white with no yellow like coloring.
All you need for this recipe is
- halibut – or your favorite white fish
- cherry tomatoes – hello summer season
- garlic and shallot
- lemon
- olive oil and vinegar
- fresh herb

Healthy Easy Tomato Lemon Roasted Halibut

Heat oven to 325'f.
Season both sides with the fish with salt and pepper. Place in an oven safe baking dish.
In a bowl toss together tomatoes, shallot, garlic and lemon. Scatter over and around the fish. Pour over olive oil and bake for 18-20 minutes. Check at around 14 minutes to make sure the fish isn't ready ( if the fish is thin it will cook quicker)
Remove from the oven and drizzle over vinegar and herbs and serve.
