I call these egg bites my clean out the fridge mea I call these egg bites my clean out the fridge meal prep. I make these every weekend and I love to use up any vegetables I have on hand. These are so easy and delicious way better than Starbucks.
If you like egg bites, these are for you. Small note I noticed that using a silicone muffin liner makes these easy and they don’t stick to the pan! Happy Cooking.

Makes 10 

1 1/2 cups cooked vegetables, chopped 
Six eggs 
1/2 full fat cottage cheese @good_culture 
1/4 Parmesan cheese 
Salt and pepper 

Preheat the oven to 400°. Then divide your vegetables into 10 muffin cups in a blender place your eggs, cottage cheese, Parmesan cheese and seasoned with salt and pepper blend until smooth and creamy. Pour egg mixture over vegetables and bake for 10 to 12 minutes or until fully cooked through.  Store in a glass container in the fridge for 4 to 5 days.

Quick and easy meatball recipe. The best part is you can use any spices and herbs you love. Make a double batch one for now and one for the freezer!

1 pound of ground chicken
1  cup of cooked rice 
1 egg 
1 tablespoon of curry powder 
1 teaspoon of paprika 
1 teaspoon of salt 
1/2 cup chopped parsley and cilantro 
Two grated garlic cloves 

Preheat the oven to 400°. Line of baking sheet with foil or parchment and drizzle with a little olive oil. So fresh and delicious you won’t be able to stop at one bite! 

4 pieces Fresh salmon 

Blackened seasoning - 3 tbsp coconut sugar, 1 tbsp kosher salt, 1 tbsp paprika and thyme , 1 tsp onion granules , garlic granules , cayenne pepper - mix together and season salmon liberally 

Add olive oil to skillet over medium heat and sear on each side until cooked to desired doneness 

Mango Salsa 
2 ripe mangos , peeled and diced 
1/4 cup finely diced red onion 
1 roma tomato , diced 
1 jalapeño, fire roasted seeded and diced 
1 bunch green onions, diced 
1 lime juiced and zested - make sure it’s a juicy one 
1 tbsp rice vinegar 
1 tsp honey 
1/2 bunch cilantro, chopped 
1 tbsp of favorite hot sauce 
kosher salt 

Mix all ingredients in a bowl and adjust seasoning to taste. Let sit for 15 minutes and serve or place in the fridge and stays fresh for 3 days
