With this grilled sweet potatoes recipe, I’ve finally found a way to get my summer sweet potato fix. When its hot out the last thing I want to do is turn on the oven. The potatoes cook up with perfect creamy middles, puffed, charred edges, and an irresistible sweet and smoky flavor. You can serve them as a side dish with anything you’re grilling, but I like them so much that I often pile them with toppings and eat them as a meal on their own. Hello healthy nachos!
All you need for this dish is :
- sweet potatoes
- olive oil
- salt and pepper
- fresh parsley
- fresh garlic
The one step you need to make sure you do before grilling is to par cook the potatoes. I love doing this in a steamer basket but you can easily just place the potatoes in a pot of water and cook like you would mashed potatoes and drain and cool. Then continue with the recipe! I love serving these with this steak the perfect summer meal.

Grilled Sweet Potato Chips
Description
Garlic herb grilled sweet potato chips. Crispy on the outside and perfectly tender on the inside.

Boil salted water in a steamer pot and cook potatoes until fork tender about 8-10 minutes. Once done remove from pot and let cool completely on a wire rack. Once cooled toss with 1 tbsp olive oil and season with kosher salt. Heat bbq to medium high and grill potatoes on each side 2-3 minutes. While potatoes are grilling grate 2 garlic cloves into metal bowl, add fresh chopped parsley and remaining olive oil. Once potatoes are grilled toss in bowl and season with additional kosher salt and fresh cracked pepper if desired.
