Hands down a crowd favorite! Believe me when I tell you that you’re going to love these uber decadent healthy steak and cheese stuffed peppers. Inside we have ultra-tender, super juicy steak coated with two types of cheese, flavorful aromatics and seasonings, stuffed into sweet bell peppers. This will become one of, if not your favorite stuffed pepper recipe.
Ingredients and substitutions
- Avocado oil – swap out for olive oil
- Bell peppers – feel free to use any colour bell pepper of your choice.
- Sirloin steak – go for any steak that’s about 1” thick. You could also use ground beef, ground turkey, chicken breast or another protein of your choice.
- Worchestire sauce – can sub coconut aminos
- Sweet onion – yellow or white onion can be used in a pinch.
- Mozzarella cheese – Swiss cheese would also be yummy on these stuffed peppers.
- Salt & pepper – to taste.
These peppers are great for meal prep too. Make ahead just wait to melt the cheese right before eating! A handful of ingredients and you have yourself a simple, delicious, high protein healthy meal.

Healthy Steak Stuffed Peppers

In a medium bowl mix the steak with salt, pepper, garlic and worchestire sauce set aside.
Heat a cast iron skillet over medium heat add 1 tbsp avocado oil. Add the onions and cook 2-3 minutes season with salt. Push onions to one side turn the heat up to high and add steak and sear on each side for 1-2 minutes . You don’t want to cook it all the way. Toss with onions and remove from heat.
Heat broiler on high and adjust oven rack 6 inches below the heating element. Toss peppers with remaining oil and Place on a baking sheet and broil until skins begin to char. Remove from the oven and cut the tops off and remove seeds. Then divide steak, onions and into each pepper . Top with the cheeses and broil until cheese is melted and gooey and gooey. Top with fresh parsley and serve.
