COOK THE PERFECT HARD BOILED EGG
Since the bulk of this recipe is undoubtedly eggs, you really want to make the perfect batch of hard boiled eggs. here a few things to look out for:
- You’ll want to cook your eggs between 12-14 minutes. Make sure your eggs are not too hard or soft.
- You don’t want the green tinge around your egg yolk. If you get this, it likely means your eggs were overcooked.
- Place eggs in a pot and cover with water then bring to a simmer and set your timer for 12 minutes – when done run under cool water then peel.
I love using greek yogurt in place of mayo nt just for the protein but I feel the yogurt brings a bit of tang that pairs so well with the curry powder. Roasted grapes are a game changer all you have to do is rinse grapes, dry them and roast on a baking sheet at 375’f for 15-20 minutes. Wrap this salad up with crunchy cabbage and you have the perfect meal.

In a medium bowl, mix together the yogurt, curry powder, turmeric, lemon juice, sea salt and pepper. Taste adjust seasoning if needed
Add the remaining ingredients to the bowl and mix until combined.
Serve in cabbage leaves or your favorite lettuce/greens.
