Weekly Kitchen Chronicles ( Week in the life of a Performance Chef)

Happy Sunday everyone! I don’t really know how to start this to be honest but i thought it would be fun if every week I did a little recap of my week cooking for my clients. Not just cooking but also new things I’ve discovered and some random thoughts.

The favorite dish of the week per my clients feedback was braised short ribs with roasted parmesan potatoes and butternut squash. I know most people say butter makes everything better but I believe its actually parmesan cheese. Which by the way is packed with protein and can be used in so many ways. One of my favorites is using the rind in tomato sauces, soups and rice. Highly recommend keeping some in your freezer for when you need them.

One of my clients he is a very well known NBA player and side note his friend came over last night and was over seven feet tall holly cow I have never meet anyone that tall. He was also very nice, the first thing he did was give me his name and asked what mine was. I loved he just introduced himself without even a hesitation … I need to do that more.

Back to my client I realized if he can’t see the food it wont be eaten. Hence any fruit needs to be one plates in the fridge and not containers. An accidental experiment happened where i washed berries and put them back in the plastic clam sheet with a paper towel wrapped around them and I was so supreme they stayed fresh for a whole week! I am excited I have now learned a new way to keep berries fresh for longer.

I am literally at the grocery store daily and it never ceases to amaze me the things I see and hear. A lady asked the fish man if the water the fish swam in was organic LOL!!!

My favorite book I read this week was Shoe Dog by Phil Knight. All about how Nike came to be and it was so fascinating to learn all the facets that go into builtin the company that it is. Also to think that only 50 years ago $2 dollars an hour is what people earned. As I try and build my business and still figure out exactly what I want to do this was a must read.
