Happy February everyone! I hope your month is off to a great start been rainy here in Socal so I am all about the cozy meals right now. This month is also fun with Super Bowl next sunday and then Valentines day the following week. I like to call february the month of LOVE!

Although I do think that is the secret ingredient in cooking put love and joy into your food and it will taste that much better.

For this weeks plan the majority of the meals are ready in less than 45 minutes full of nutritious ingredients and easy to make!

Monday – Sheet Pan Ranch Roasted Chicken , potatoes and veggies

Tuesday – Steak stuffed Peppers

Wednesday – Mediterean Salmon with pomegranate avocado salsa , love to serve with couscous and roasted carrots

Thursday –Creamy dairy free roasted cauliflower, love to serve with roasted chicken and rice or potatoes

Friday – Instant Pot BBQ chicken stuffed sweet potatoes ( recipe below )

Saturday – Fajita mini Frittatas

Sunday- Super Bowl all about Creamy dairy free spinach dip and avocado black bean salsa

  1. season chicken with bbq spice and place in instant pot. Add broth and close lid. Turn on to manual and high pressure cook for 10 minutes. Release steam then shred chicken and toss with bbq sauce. 

    Serve inside baked potatoes
